Moroccan Chocolate Chunk Pumpkin Bread

This delightful Moroccan Chocolate Chunk Pumpkin Bread combines the rich flavors of pumpkin and dark chocolate, resulting in a moist and flavorful loaf that's perfect for any occasion. Ingredients:

  • 2 cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ½ teaspoon salt
  • 1 cup packed brown sugar
  • 2 large eggs
  • ½ cup unsalted butter, melted (plus extra for greasing the pan)
  • ¼ cup brewed black tea, cooled
  • 2 teaspoons vanilla extract
  • 1⅓ cups pumpkin puree
  • 1 cup dark chocolate chunks or chips

 

Optional Topping:

  • 3 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

 

Instructions:

  1. Preheat the Oven: Set your oven to 350°F (175°C). Grease a loaf pan (approximately 8.5" x 4.5" x 3") with butter or line it with parchment paper.
  2. Combine Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.
  3. Mix Wet Ingredients: In a separate bowl, whisk the brown sugar and eggs until smooth. Add the melted butter, brewed black tea, vanilla extract, and pumpkin puree, mixing until fully incorporated.
  4. Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently with a spatula until just combined. Be careful not to overmix; it's okay if some small lumps remain. Fold in the dark chocolate chunks or chips.
  5. Prepare the Topping (Optional): In a small bowl, mix the granulated sugar and ground cinnamon.
  6. Transfer to Pan: Pour the batter into the prepared loaf pan, spreading it evenly. If using the optional topping, sprinkle the cinnamon-sugar mixture over the top of the batter.
  7. Bake: Place the pan in the preheated oven and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Cool and Serve: Allow the bread to cool in the pan on a wire rack for about 15 minutes. Then, remove it from the pan and let it cool completely before slicing.
