Moroccan Saffron Soup With Roasted Eggplant and Sweet Potatoes (Vegan)

Indulge in this hearty Moroccan Saffron Soup, a vegan delight that combines the rich flavors of roasted eggplant and sweet potatoes. Ingredients:

  • 2 large sweet potatoes (about 1 pound), peeled and cut into 1-inch cubes
  • 2 large eggplants (about 1 pound), cut into 1-inch cubes
  • 2 tablespoons olive oil
  • Salt, to taste
  • 2 medium onions, thinly sliced
  • 2 medium tomatoes, grated
  • 2 tablespoons tomato paste
  • ½ teaspoon ground turmeric
  • Generous pinch of saffron threads
  • ½ teaspoon ground black pepper
  • 4 cups vegetable broth
  • 1 can (15 ounces) chickpeas, rinsed and drained
  • 3.5 ounces (about 1 cup) spaghetti, broken into 1-inch pieces
  • Chopped fresh parsley, for garnish

 

Instructions:

  1. Roast the Vegetables: Preheat the oven to 400°F (200°C). Place the cubed sweet potatoes and eggplants on a large baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with salt. Toss to coat evenly. Roast in the oven for 25-30 minutes, or until tender and golden. Set aside.
  2. Prepare the Soup Base: In a large pot, heat the remaining 1 tablespoon of olive oil over medium heat. Add the sliced onions and sauté until translucent, about 5 minutes. Stir in the grated tomatoes, tomato paste, turmeric, saffron, black pepper, and a pinch of salt. Cook for another 5 minutes, allowing the flavors to meld.
  3. Simmer: Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and let it simmer for 10 minutes.
  4. Add Chickpeas and Pasta: Add the rinsed chickpeas and broken spaghetti to the pot. Continue to simmer until the pasta is al dente, approximately 10 minutes.
  5. Incorporate Roasted Vegetables: Gently stir in the roasted sweet potatoes and eggplants. Let the soup simmer for an additional 5 minutes to heat through.
  6. Serve: Ladle the soup into bowls and garnish with chopped fresh parsley.
