Moroccan Kefta Meatball and Tomato Sauce Tagine

Ingredients:

 

  • For the Meatballs (Kefta):
    • 1 lb ground beef or lamb
    • 1 small onion, grated
    • 2 garlic cloves, minced
    • 1/4 cup chopped fresh parsley
    • 1/4 cup chopped fresh cilantro
    • 1 teaspoon ground cumin
    • 1 teaspoon paprika
    • 1/2 teaspoon ground cinnamon
    • Salt and pepper to taste

 

  • For the Tomato Sauce:
    • 2 tablespoons olive oil
    • 1 medium onion, finely chopped
    • 3 garlic cloves, minced
    • 1 teaspoon ground cumin
    • 1 teaspoon paprika
    • 1/4 teaspoon ground turmeric
    • 1 (15 oz) can crushed tomatoes
    • 1/2 cup water
    • 1 preserved lemon, thinly sliced (optional)
    • Salt and pepper to taste
    • Fresh parsley or cilantro, for garnish

 

Instructions:

 

  1. Prepare the Meatballs:
    • In a large bowl, combine ground meat, grated onion, garlic, parsley, cilantro, cumin, paprika, cinnamon, salt, and pepper. Mix well and shape into small meatballs (about 1 inch in diameter).
  2. Cook the Sauce:
    • Heat olive oil in a large tagine or skillet over medium heat. Add the chopped onion and sauté until soft, about 5 minutes.
    • Stir in garlic, cumin, paprika, and turmeric. Cook for another minute until fragrant.
    • Add crushed tomatoes, water, and preserved lemon (if using). Bring to a simmer and season with salt and pepper.
  3. Simmer the Meatballs:
    • Gently place the meatballs into the sauce. Spoon some sauce over the meatballs, cover, and simmer on low heat for 25–30 minutes, or until the meatballs are cooked through and the sauce has thickened.
  4. Garnish and Serve:
    • Sprinkle with fresh parsley or cilantro. Serve hot with crusty bread, rice, or couscous.
