Kefta Briwate: Moroccan Triangle-Shaped Appetizer stuffed with Minced Beef

Ingredients:
- 1 lb. minced beef (or lamb)
- 1 onion, finely chopped
- 1 tsp ground cumin
- 1 tsp paprika
- ½ tsp cinnamon
- 2 tbsp finely chopped parsley
- 2 tbsp finely chopped cilantro
- Salt and pepper to taste
- 8 oz filo pastry
- 1 egg yolk (for sealing)
- Oil for frying
Method:
- Kefta Filling: Put the minced meat (or Kefta) in a large bowl and add the onion, cumin, paprika, cinnamon, parsley, cilantro, salt, and pepper. Mix well.
- Folding Borek (or Briwate): Fold a sheet of filo pastry, into a strip about 4 inches wide. Put a spoonful of the Kefta filling at one end and fold the pastry diagonally to form a triangle. Keep on folding until you get a neat triangular packet. Seal the edge with a little egg yolk.
- Frying to Perfection: Heat the oil in a frying pan over medium heat. Fry the Briwate in batches until it is golden brown and crispy, 3-4 minutes per side. Drain using paper towels,
