Moroccan Fekkas with Almond (Biscotti)

Moroccan Fekkas with Almond (also known as Biscotti) is a popular Moroccan sweet treat. It is a type of biscuit that is often enjoyed with tea or coffee. Fekkas are typically crisp and have a nutty flavor, thanks to the addition of almonds. Here's a recipe to make Moroccan Fekkas with Almond:

 

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup almonds, coarsely chopped
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon (optional)
  • Butter or Vegetable oil, for greasing

 

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a baking sheet with vegetable oil or line it with parchment paper.
  2. In a large bowl, combine the flour, almonds, sugar, baking powder, cinnamon, and salt. Mix well.
  3. In a separate bowl, whisk together the eggs, melted butter, vanilla extract, and lemon zest (if using).
  4. Pour the egg mixture into the dry ingredients. Mix everything together until well combined and a dough forms. You may need to use your hands to bring the dough together.
  5. Divide the dough into two equal portions. Shape each portion into a log, approximately 10-12 inches long and 2 inches wide. Place the logs on the prepared baking sheet, leaving some space between them.
  6. Bake in the preheated oven for about 25-30 minutes or until the logs are firm and lightly golden.
  7. Remove the baking sheet from the oven and let the logs cool for about 10 minutes. Reduce the oven temperature to 300°F (150°C).
  8. Transfer the slightly cooled logs to a cutting board. Using a sharp knife, cut the logs diagonally into 1/2-inch-thick slices.
  9. Arrange the slices on the baking sheet, cut side down. Return them to the oven and bake for an additional 15-20 minutes, or until the biscotti are dry and crispy.
  10. Once baked, remove the biscotti from the oven and allow them to cool completely on a wire rack.
  11. Moroccan Fekkas with Almond are now ready to be enjoyed. Serve them with tea, coffee, or as a delightful snack.

Note: You can store the cooled biscotti in an airtight container for up to a couple of weeks.
