Moroccan Artichoke Tagine with Peas, Baby Potatoes, and Lemon (Vegan)

Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 2 cups baby potatoes, halved
  • 2 cups frozen peas
  • 4 cups fresh or frozen artichoke hearts, quartered
  • 1 preserved lemon, rinsed and finely chopped
  • 2 cups vegetable broth or water
  • Juice of 1 lemon
  • 1/4 cup chopped fresh parsley or cilantro, for garnish

 

Instructions:

  1. Prepare the Base: Heat olive oil in a large tagine or pot over medium heat. Add the onions and sauté until soft, about 5 minutes. Stir in the garlic, ginger, turmeric, cumin, and cinnamon. Cook for another minute until fragrant.
  2. Add the Vegetables: Toss in the baby potatoes, stirring to coat them in the spices. Add the artichoke hearts and preserved lemon.
  3. Simmer: Pour in the vegetable broth, bring to a simmer, then lower the heat. Cover and cook for 20 minutes, stirring occasionally.
  4. Add Peas and Finish: Stir in the peas and lemon juice. Simmer uncovered for another 10 minutes, until the potatoes are tender and the sauce has thickened slightly. Adjust seasoning with salt and pepper.
  5. Serve: Garnish with chopped parsley or cilantro and serve with warm bread or fluffy couscous.
