Moroccan Chicken Tagine with Chickpeas and Fresh Figs

Ingredients:

 

  • For the Tagine:
    • 2 tablespoons olive oil
    • 1 large onion, finely chopped
    • 3 garlic cloves, minced
    • 2 teaspoons ground ginger
    • 1 teaspoon ground cinnamon
    • 1 teaspoon paprika
    • 1/2 teaspoon ground turmeric
    • Salt and pepper to taste
    • 1 whole chicken (about 3 lbs), cut into pieces or 6-8 chicken thighs
    • 1 (15 oz) can chickpeas, drained and rinsed
    • 1 cup chicken broth or water
    • 1/4 cup dried figs or 6-8 fresh figs, halved
    • 1 preserved lemon, finely chopped (optional)

 

  • For Garnish:
    • 1/4 cup chopped fresh parsley or cilantro

 

Instructions:

 

  1. Prepare the Base:
    • Heat olive oil in a large tagine or heavy-bottomed pot over medium heat. Add the onions and sauté until soft, about 5 minutes.
    • Stir in garlic, ginger, cinnamon, paprika, and turmeric. Cook for 1 minute until fragrant.
  2. Cook the Chicken:
    • Add chicken pieces to the pot, ensuring they are well coated with the spices. Brown the chicken lightly on all sides, about 5 minutes.
  3. Add Chickpeas and Simmer:
    • Stir in the chickpeas, chicken broth, and preserved lemon (if using). Bring the mixture to a gentle simmer, cover, and cook on low heat for 30 minutes, stirring occasionally.
  4. Add Figs and Finish:
    • Add the figs to the tagine and cook uncovered for another 10 minutes, allowing the sauce to thicken slightly.
  5. Garnish and Serve:
    • Sprinkle with chopped parsley or cilantro before serving. Pair with warm bread, rice, or couscous for a complete Moroccan-inspired meal.
